Past Fazool

Ingredients

  • 1 tablespoon to 1/3 cup extra virgin olive oil
  • 1 can white beans, preferably cannellini, drained and rinsed
  • Butcher cut bacon. 3/4 pound, cut into chunks
  • 1 yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 3 to 6 tomatoes, fresh or canned, chopped
  • pinch red pepper flakes
  • 2 to 4 cups water or broth
  • 8 oz spaghetti broken into fourths
  • salt pepper
  • 1 teaspoon tomato paste
  • 1/8 teaspoon oregano
  • Freshly grated Parmesan, gobs of it
  • celery, chopped (optional)

 

Directions

  1. Cook olive oil, bacon, onion, celery, garlic until soft
  2. Add tomatoes, paste, red pepper, salt and pepper. Simmer 10 to 20 minutes
  3. Add beans, broth and cook for about 30 minutes
  4. Add pasta, Cook until spaghetti al dente.
  5. Serve with tons of Parmesan on top.
