Carne Asada With Black Bean And Avacado Salsa

This is a very light, healthy meal for a warm summer day.  I love it.

Salsa Ingredients

  • 1 can black beans, rinsed
  • 1 ripe avacado, chopped
  • 1 1/2 cup chopped white onion, rinsed
  • 1 cup finely chopped ripe tomato
  • 2 tbs chopped fresh cilantro
  • 1 tbs lime juice
  • 1/2 tsp salt
  • 1 tsp chipotle chile powder
  • 1/4 tsp ground cumin
  • 1/8 tsp fresh ground black pepper

Rub Ingredients

  • 1 tsp chipotle chili powder
  • 1 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp ground black pepper

Steak Ingredients

  • 1 1/2 lb skirt steak, trimmed of fat
  • Extra virgin olive oil


  1. Combine the salsa ingredients in a bowl and cover with plastic wrap.  Set aside at room temperature for up to 2 hours.
  2. In a small bowl, mix the rub ingredients.  Coat both sides of the steaks with the olive oil.  Season evenly with the rub and let stand for 20 minutes prior to cooking.
  3. Grill the steaks over high heat with the lid closed, until cooked to your desired doneness, which is 4 to 6 minutes for medium rare.  Turning once.  Let the steak rest for 3 to 5 minutes after cooking.
  4. Cut the steaks across the grain into 1/2 inch thick slices.  Serve warm with the salsa.
