Belcamino’s Hearty Winter Rain Chili

This is the perfect recipe for a cold winter night.  The first ingredient in any recipe in our home is a glass of wine to start prepping the meal.

 

Chili Ingredients

  • 1 1/2 lbs of Ground Beef or Lean Turkey
  • 1 Yellow onion diced
  • 1 Green bell pepper diced
  • 3 Cloves of minced garlic
  • 1 Tbsp Olive Oil
  • 1 160z can of whole kernel corn drained
  • 2 160z cans of black beans drained
  • 1 16oz can of whole peeled tomatoes drained
  • 1 16oz can of garbanzo beans drained
  • 1 160z can of chili beans drained
  • 1 16oz can of kidney beans drained
  • 1 160z can of diced tomatoes drained
  • 1 16oz can of stewed tomatoes drained
  • 1-2 Tbsp of Oregano…..we love Oregano, so we tend to put more then less.
  • 1 Tbsp of black pepper
  • 2 Tbsp of Chili Powder
  • 2 Tbsp of Chipotle Pepper
  • 1/2 tsp of garlic salt
  • 1 tsp of cilantro

Directions

  1. Saute the onion, bell pepper and garlic in the olive oil.  Cook until tender.
  2. Remove the vegetables from the pan and brown the meat in the same pan.
  3. Once the meat is brown, drain the fat.
  4. Combine the meat, vegetables, and spices.  Bring to a boil.
  5. Reduce heat and cover and simmer for 20 minutes.

NOTES:

  • The spiciness of the chili is dependent upon the amount of black pepper you use.
  • If you use turkey instead of ground beef, you may want to add a little extra seasoning…the turkey doesn’t have as much flavor as ground beef.
  • You can certainly play with the amount of spices you use.
